Mom's Vegetable Cheese Pie
Ingredients
Crust:
- 1 ½ cups bread crumbs
- 3 tbsp becel margarine
- oregano to taste
- basil to taste
Filling:
- 4 cups of vegetable (using onions, mushroom, carrots, broccoli, cauliflower or whatever vegetables you like)
- 1 tsp becel margarine
- ½ cup milk
- 1 egg plus an egg white
- pepper to taste
- basil to taste
- oregano to taste
- garlic powder to taste
- Essential cheese, grated (about 1 ½ cups)
Preparation
Pre-heat your oven to 350°F. In a bowl mix together the basil, oregano, bread crumbs and margarine and pat on a 10" pie plate. Bake for about 7 to 8 minutes.
Remove and sprinkle ½ of the cheese over the crust. In a frying pan on medium heat melt the margarine. Sauté the onions until opaque. Stir-fry the rest of the vegetables with onions. While stir-frying add the herbs. Pour over crust. In a cup mix together with a fork the milk and eggs, pour over vegetables. Bake for about 20 to 25 minutes. Remove from the oven and sprinkle the rest of the cheese over the vegetables. Bake for another 10 minutes or until the cheese is melted.
